in order to evaluate some ETLs to read data from several data sources, I've noticed that it doesn't exist any connectors for SFTP, FTP and Oracle sources.
I'd like to know the reason for a such lack, if possible.

you're correct. The links shared are applicable for both Fabric Dataflow Gen2 and Power BI Dataflows. The connector documentation in the Power Query learn site also states in which products each connector is available.
As mentioned before, Dataflow Gen2 inside of Fabric does have an Oracle connector. Here's the link to that article:

If you're unable to see this connector in the Dataflow Gen2 experience inside of Fabric, please do share a screenshot of what connectors you're able to see within the "Database" category. We can investigate why you may not be able to see the Oracle connector in it.
In regards to the comparison between connector availability between pipelines and Dataflows, they use different architecture and mechanisms behind the scenes to get and process the data. Furthermore, quite a number of connectors that you see in Dataflows are created using the Power Query SDK, and the certification program of connectors makes those connectors available in Dataflows Gen1, Dataflow Gen2 and Power BI in general. However, Data pipelines in Microsoft Fabric do not have an extensibility story at the moment.
There is no specific reason why a particular data source is not part of the product today other than it just hasn't been created yet. We do take feedback from our users and try to deliver based on the request from customers. An example of a similar instance was the Google Sheets connector which started as an idea in the Ideas Portal until it was picked up by the connectors team which developed such connector that we have today.
We thank you for your feedback and do encourage you to vote on the idea for the SFTP connector in Dataflow Gen2. For the issue around the Oracle connector, please let us know if you're unable to see it in the "Database" category of connectors and please share a screenshot of the connectors that you're able to see.

Hi, I've already read and checked the official documentation about the data flow gen2 of Fabric Data Factory. I'm referring to Fabric Data Factory and not to Power Query of Power BI.
Reading the official documentation of Fabric Data Factory data flow gen2 I've noticed the lack of FTP, SFTP and Oracle connectors and I've created this post to know, if possible, the related reason.

Dataflows is also referred as the Power Query Online experience. The documentation articles shared are both applicable to Dataflows (Power Query Online), and for Power BI Desktop (Power Query Desktop) only the Power Query article will be applicable. You can also see how some of these articles showcase screenshots using both experiences (Online and Desktop) like the article shared for Oracle:

We do primarily try to prioritize based on the feedback that customers have provided and create connectors that way. A large majority of the connectors that you're seeing in Dataflows have been created by the data source owners using the Power Query SDK and then having those connectors certified. Only a handful of connectors are created by Microsoft.
For the sources that you've listed that are not in Dataflows (FTP and SFTP), you could use the pipeline copy activity to load the data into a Lakehouse and use the Lakehouse connector inside of Dataflows to connect to that data.
If perhaps you'd like to see an FTP or a SFTP connector in Dataflows, I'd highly encourage you to post this in the Fabric Ideas portal. I was able to find an existing idea for it, so you can vote for this one as well:

I'm referring to the dataflow gen2 of Fabric Data Factory and not of Power BI.
Reading the official documentation, MySQL is supported by both Fabric Data Factory data pipeline and Fabric Data Factory dataflow gen2; so I don't understand because FTP, SFTP and Oracle sources aren't supported by Data Factory dataflow gen2 or, in other terms, they are supported only by Data Factory data pipeline.
I think that a suck lack should not have existed and so it should be no need to post an idea.
